A little history
The origins of the Spritz itself can be traced back to the 19th century during the Austro-Hungarian Empire's control over the Veneto region. Austrians would dilute Venetian wines with a splash of soda to make them lighter and more palatable, which laid the foundation for what would eventually become the Aperol Spritz. Â
The history of this cocktail traces back to the early 20th century, when Aperol was first introduced by the Barbieri brothers at an International Fair in 1919. The drink then became widely popular in the 1950s and 60s, when Italian Dolce Vita lifestyle of enjoying leisurely aperitivos in the early evening took off. Â
The modern version of the Aperol Spritz started to take shape only later; and the classic recipe of three parts prosecco, two parts Aperol, and one part soda water today has became a staple in bars and restaurants across Italy and has gained international fame.
