ORIGINAL PESTO
Creamy nuts and basil sauce, Genoa style
You can whizz up this easy homemade recipe in only 15 minutes and with only a couple of ingredients. Pesto is one of the best condiments to keep on hand, as it can brighten pasta, salads, sandwiches, roasted veggies & more!
With just a few easy steps, you can turn anything in an instant tasty meal, whether you feel like cooking or not…whether you feel like putting your mortar and pestle skills to the test, or lazily use a food mixer (just don’t tell your Italian friends! 🤫)
Pesto will keep for a few days in an airtight container in the fridge. Nevertheless, as its surface may turn brown, it is good practise to drizzle a bit of extra virgin live oil on the top before sealing your container.

A little history
Pesto originated around the 16th century in Genoa, a city located in Italy's northern region of Liguria. In Genoa pesto is made unconditionally in a mortar and pestle, and this is in fact how pesto got its name, which literally means “pounded”!
Also the ‘spread’ of pesto internationally is due to Genoa, as its sailors travelled the four corners of the world and helped to make traditional Ligurian flavors known.
Legend says that we might trace the origins of this super tasty, gluten free sauce all the way back to the Romans, who used to eat a pesto-like paste called 'moretum', which combined crushed cheese, garlic and herbs together…but let’s not be too controversial!
INGREDIENTS👇🏻
• 50g | 01.8oz fresh basil
• 15g | 00.5oz pine kernels
• 40g | 01.4oz Parmigiano Reggiano cheese
• 20g | 00.7oz Pecorino Cheese
• 1 clove of garlic
• extra virgin olive oil
• coarse sea salt
The recipe step by step
Wash and dry the fresh basil leaves and grate both Pecorino and Parmigiano Reggiano cheese
Combine the garlic clove and the coarse sea salt with a mortar and pestle
Add and grind thoroughly all the basil leaves little by little
Add both grated cheeses and mix to create a uniform paste
Add extra virgin olive oil until reaching the desired creaminess…then enjoy! 😋
